Census Notes for Benjamin Wesley Dalton
He is probably the Benjamin Dalton age 17 listed in the 1870 Carroll Co., Va census as a farm hand with the family of Alexander Dalton age 26 and wife Frances age 24. I have not found him in the 1860 census.
Notes for Sarah Ellen Dalton
Carroll Co. Virginia death records list Sarah E. Dalton, age 24, died 10 Dec 1881, married, parents Benjamin W. Dalton, informant Benj Dalton.

Her husband’s name has probably been mistakenly entered into the parent field.

The age at death implies a birthdate in 1857, which is consistent with her reported age in the 1900 census, although her reported age on the marriage record suggests a birthdate about 1853, which is consistent with the 1860 census.

Carroll Co. Virginia marriage records list the marriage on 15 Aug 1872 of Benjamin W. Dalton, age 17, single, born in Carroll Co., son of James & Nancy Dalton, and Sarah E. Dalton, age 19, single, daughter of Mary Dalton.

The ages, if correct, would put Benjamin as born about 1855, and Sarah as born about 1853.
Census
1880 census of Carroll Co., Virginia, Pine Creek district, enumerated 2 June, lists on p. 4 as family #24/25:
Dalton, Benj W., 24, farmer; Sarah Ellen, 23, wife; George W., 5; Garland H., 4, son; Albert Lee, son, 2. All born Va Va Va.

If the ages given on their marriage license were correct, then Benjamin should be about 25 and Sarah Ellen about 27. The age given on Sarah Ellen’s death record, though, is consistent with her age here.

1900 census of Carroll Co., Virginia, enumerated 21 June, lists on p. 13B as family #235/243:
Daltan, Benjamin W., 40, b. Oct 1859, widowed, farmer; Polly, mother-in-law, 69, b. Sep 1830, widowed, mother of 6 children, 5 living; Rosetta, sister-in-law, 27, b. May 1873, single. All born Va Va Va.

Since Benjamin was married in August of 1872, he cannot really have been born in Oct 1859, or he would have been only 12 at the time of his marriage.

The next household is that of Benjamin and Sarah’s son Garland.
