Lester Binnie's cemetery records say that Jacob's gravestone reads "died 31 June 1851, age 21 days". June, however, does not have 31 days. The most likely misreading due to a worn stone seems to be misreading a 2 as a 3. Misreading a 0 as a 1 does not seem likely. Of course, the people responsible for the inscription could have thought June had 31 days, so maybe it should be July 1!
