1880 census of Bath Co., Ky, Owingsville precinct, enumerated 30 June, lists on p. 35 as family #450/452:
Toy, James, 21; Elizabeth, 18, wife; Jane, 48, mother, widowed, b. Ky Ky Ky.
Curiously, though, Andy and Jane’s son James was listed in a different household, with his wife Alice Williams. So it is unclear who this son is. It could be their son Pat (who should be age 19), with his wife Elizabeth Tincher, whom he married in April 1880. But Patrick -> James would be an unusual name migration. Or it might be Patrick’s twin brother Joseph, who may have also married an Elizabeth. The name shift Joseph -> James is very common, when “Jos” is misread as “Jas”. And that would still leave the question of where Patrick was in this census year. Also, the following household is headed by Elizabeth Tincher’s half-brother Strib.
So the mostly likely situation is that this is Pat, and that his middle name is Joseph or James. Perhaps the twins were named Patrick Joseph and Joseph Patrick (that sort of naming pattern for twins isn’t as common as rhyming or alliterative names, but it isn’t rare).

1850 census of Bath Co., Ky, division 2, enumerated 30 July, lists on p. 30 as family #204:
Andrew Toy, 30, farmer; Jane, 20; Nancy, 4; Catherine, 2; William, 3/12. All born in Kentucky.
1860 census of Bath Co., Ky, Owingsville P.O., enumerated 7 June, lists on p. 23 as family #160:
Andy Toy, 40, farm hand; Amandy, 30; Nancy, 13; Mary, 11; Jane, 3; Wiliam, 6. All born in Kentucky.
This census has so many inconsistencies with other records that I suspect the census taker took scratch notes when visiting and then could not read his own notes. Catherine, who should be 11 (based on her death record) or 12 (based on the 1850 census), is missing even though she was alive. She is unlikely to be the daughter listed as Mary age 11, since a daughter Mary’s birth was recorded in August 1856. Perhaps a line was skipped in transcribing, so that Catherine’s age got transferred to Mary. The daughter Jane should be a son James. The son William should be 9 or 10.
1870 census of Bath Co., Ky, Sharpsburg precinct, enumerated 7 June, lists on p. 10 as family #63:
Toy, Jane, 36; William, 19; Mary, 13; James, 12; Patrick, 8; Joseph, 8 (bracketed as twins). All born in Kentucky.
The son James age 12 in this census is apparently the same person as the daughter Jane age 3 in the 1860 census.
