Her name is spelled as Mollie on the 1910, 1920, and 1930 censuses and on the birth records for all of her children, but her Social Security number was issued under the spelling Molly, and her death is recorded under that spelliing as well, so probably she switched to the more common spelling sometime in the 50’s or 60’s.
